Beat egg and season with salt. Add 1 tbs water to make it soft.
Dilute potato starch in same amount of water.
Heat your frying pan smoking hot, add in vegetable oil. Pour in the egg mixture, stir quickly to make soft omelet. Slide onto the rice. Top with crab sticks.
In the same pan, add in chicken stock, vinegar, sugar and soy sauce. Add in potato starch solution to thicken up the sauce..
Pour over the rice.
