HOW TO MAKE ★JAPANESE HAMBURGER STEAK★

one of the staples dishes of Japanese home cooking, loved by all generations.  If you make good Hamburg, you will be respected. It’s THAT important.

Ingredients
  

Hamburger steak

  • 1 onion (medium-size)
  • 450 g ground beef and pork
  • ½ cup Panko bread crumb
  • 3 tbs whole milk
  • 1 ts salt
  • 1 large egg
  • ½ ts sugar
  • ¼ ts nutmeg
  • ¼ ts black pepper
  • 2 ts ketchup

DIY Demi-glace sauce

  • ½ cup water
  • 1 tbs light brown sugar
  • 2 tbs sake
  • 1 tbs soy sauce
  • 1~2 tbs ketchup
  • 1 tbs Tonkatsu sauce
  • 1 ts vegetable oil
  • 1 ts all-purpose flour

Instructions
 

Hamburger steak

  • Mince onion.
    Cook until caramelized.
    Take out to a large bowl to cool it down.
  • Combine Panko and whole milk. Let it sit until moisten.
  • Mix all the ingredients until well combined.
    Mix until the fat from the meat stick to the side of the bowl.
  • Divide into 8 or desired size.
    Take one portion, shape into balls like catching a ball to remove the air inside.
    Shape into 2/3 thick oval shape. Make a dent in the center.
  • Cook on medium heat until golden brown.
    Flip it over, cover and cook 7 to 8 mins on low.
    Take out and keep warm.

DIY Demi-glace sauce

  • Pour 1/2 cup water into the frying pan, bring it to a boil.
    Pass through a sieve.
    Add in seasonings and mix well.
  • Heat a clean frying pan on medium, add in vegetable oil.
    Add in flour and cook 1 to 2 mins until bubbling.
    Add in gravy mixture, cook until thicken stirring constantly.

Assemble

  • Get your hamburger steak back to the sauce.
    Cook until heated through.
    Serve with mashed potato and vegetables.
