Kumquat Compote
Delightful addition to Osechi Ryori, symbolizing wealth and prosperity for the upcoming year.

- 300 g kumquat (2/3lb)
- 150 g Sugar (1 1/2 cup) sugar
- a pinch of salt
Wash kumquat, remove stem, cut slits all around. (5~6 slits)
Boil for five minutes to remove bitterness. Drain, put them back in clean pot.
Add a half amount of sugar and a pinch of salt, water to cover. Put on drop lid, cook 10 minutes.
Add the rest of the sugar, cook 20 mins more or until soft.
