- Wash kumquat, remove stem, cut slits all around. (5~6 slits)
- Boil for five minutes to remove bitterness. Drain, put them back in clean pot.
- Add a half amount of sugar and a pinch of salt, water to cover. Put on drop lid, cook 10 minutes.
- Add the rest of the sugar, cook 20 mins more or until soft.
