Kumquat Compote

Delightful addition to Osechi Ryori, symbolizing wealth and prosperity for the upcoming year.

Ingredients
  

  • 300 g kumquat (2/3lb)
  • 150 g Sugar (1 1/2 cup) sugar
  • a pinch of salt

Equipment

  • 1 pot

Method
 

  1. Wash kumquat, remove stem, cut slits all around. (5~6 slits)
  2. Boil for five minutes to remove bitterness. Drain, put them back in clean pot.
  3. Add a half amount of sugar and a pinch of salt, water to cover. Put on drop lid, cook 10 minutes.
  4. Add the rest of the sugar, cook 20 mins more or until soft.
