- Transfer cooked rice in a bowl. Set aside.
- Beat egg and season with salt. Add 1 tbs water to make it soft.
- Dilute potato starch in same amount of water.
- Heat your frying pan smoking hot, add in vegetable oil. Pour in the egg mixture, stir quickly to make soft omelet. Slide onto the rice. Top with crab sticks.
- In the same pan, add in chicken stock, vinegar, sugar and soy sauce. Add in potato starch solution to thicken up the sauce..
- Pour over the rice.
