This recipe is a traditional Japanese way of turn your garbage into food.
That is what we call the “Mottainai” spirit, meaning utilize every part of food as much as we can.
It requires only two ingredients but still tastes so good!
All you need is 1% salt of the weight of watermelon rind
Cut off the reddish part of the rind because it tastes “too fruity.”
Shave the outer peel, thinly slice the rind.
Please put them in a plastic bag, toss in 1% salt.
Leave it in the fridge overnight.
That’s it!
