Watermelon Rind Pickles in Japanese style | 2 ingredients Mottainai Recipe
Please don’t throw away your watermelon rind!
Today I want to share with you Watermelon Rind Pickles.
Maybe you don’t want to throw away the watermelon rind that seems to be edible.
This recipe is a traditional Japanese way of turn your garbage into food.
That is what we call the “Mottainai” spirit, meaning utilize every part of food as much as we can.
It requires only two ingredients but still tastes so good!
All you need is 1% salt of the weight of watermelon rind
Cut off the reddish part of the rind because it tastes “too fruity.”
Shave the outer peel, thinly slice the rind.
Please put them in a plastic bag, toss in 1% salt.
Leave it in the fridge overnight.
How easy is that!
For me, it reminds me of my grandmother. A nostalgic taste.
I hope you will give this recipe a try!
