Teriyaki sauce
When you think of Japanese flavor, what comes to mind?
For me, it’s the Teriyaki flavor.
Soysauce-based, sweet, and savory Teriyaki flavor Japanize any ingredients like chicken, fish and even with vegetables.
I keep my homemade Teriyaki sauce in my fridge all the time. If you have it, you can make delicious Teriyaki dish in no time.
I can’t make Bento in the busy morning without this sauce.
What I like about Teriyaki sauce is its versatility.
If you add grated ginger, you can make Pork Ginger.
If you combine with Sushi vinegar, you can make Sweet and Sour chicken.
You will see how versatile it is in my cooking.
riyaki sauce consists of soy sauce and Mirin and sugar. Some people add Sake. (But never garlic in Japan!)
I want to add a green part of the long green onion and the ginger peel to add aroma and natural thickness.
These aromatics are kitchen garbages, but you can still use it if you wash thoroughly.
Make it once in a couple of months, and you can save your time!
Teriyaki sauce

Ingredients
- 1 cup soy sauce (240ml)
- ½ cup Mirin (120ml)
- 3 tbs sugar
- green part of long green onion ※optional
- skin of ginger ※optional
Instructions
- Put everything in a pot, cook on low heat.
- Simmer 5 mins.
- Let it cool to room temp.Strain and transfer to a bottle.
- You can keep it up to 3 months in the fridge.
